National Carrot Cake Day is on February 3rd. Carrots have been sweeteners for cakes as far back as the 5th century. The year 1827 is the oldest date known for a published recipe. Also, during WWII carrot cake renewed its’ popularity in Great Britain. Ads ran that required citizen to eat more carrots. The premise was that eating carrots makes you see better at night. As a result, sales of carrots and carrot cakes went through the roof. In the 1960s the dessert became a staple in American households. It remains a favorite today. Restaurants such as Buckley’s, Eli’s Cheese Cake, and Colectivo all have specials honoring this day. So, have a slice of the moist cake with the decadent sweet cream cheese icing.
